The shells become slightly soft during boiling, making them easy to crack open to reveal the plump, tender, seasoned nuts within. At coastal markets in particular, boiled groundnuts are a fixture.
Ingredients
Equipment: Large saucepan with lid
- 500g raw groundnuts — in their shells
- 2 tbsp salt
- 4 cups water
- Optional: 1 tsp chilli flakes, 2 garlic cloves — for flavoured version
Method
- Rinse the groundnuts in their shells thoroughly.
- Place in a large pot. Cover with water. Add salt generously.
- Add chilli and garlic if using.
- Bring to a boil. Reduce heat and simmer covered for 35—45 minutes.
- Test by opening one shell — the nuts inside should be tender and creamy, not crunchy.
- Drain.
- Serve hot or at room temperature, cracking shells to eat.
