It sits between a garlic aioli and a yogurt-based dip, with a distinctly Kenyan character from the lemon and fresh coriander.
Ingredients
Equipment: Blender or mortar and pestle, Bowl
- 8 garlic cloves — roasted or raw
- 1 cup natural yogurt or mayonnaise (or half each)
- 2 tbsp lemon juice
- 2 tbsp fresh coriander — finely chopped
- 1 tsp salt
- ½ tsp white pepper
- 1 tbsp olive oil
- ¼ tsp chilli flakes — optional
Method
- For roasted garlic: wrap unpeeled cloves in foil and roast at 180°C for 20 minutes until soft and golden. Squeeze out roasted garlic.
- For raw garlic version: mince garlic very finely or crush in a mortar.
- Combine garlic, yogurt/mayonnaise, lemon juice, coriander, salt, pepper, and olive oil.
- Blend until smooth or mix thoroughly by hand for a more textured result.
- Taste and adjust salt and lemon.
- Refrigerate for 30 minutes before serving — the flavour develops.
Chef Tips
- Roasted garlic gives a sweeter, more mellow sauce — raw garlic is sharper and more pungent. Both are delicious.
- A combination of yogurt and mayonnaise gives the best texture — yogurt alone is too thin.
- Resting in the refrigerator for 30 minutes is important — the flavour deepens significantly.

- Too much lemon — can curdle the yogurt.
