Kenyan Fried Chicken — chicken pieces marinated in garlic, ginger, lemon, and Kenyan spices, then deep-fried until the skin is shatteringly crispy and the meat is juicy and flavourful. Kenya's beloved take on fried chicken — spicier, more aromatic, and entirely its own.
Kenyan fried chicken is not KFC. It is something better — chicken soaked in a fragrant marinade of garlic, ginger, lemon juice, paprika, and cumin, then fried until the skin crisps into something deeply satisfying. At roadside kiosks, in family kitchens, and at celebrations across Kenya, kuku wa kukaanga is a universal crowd-pleaser.
Ingredients
Equipment: Large deep frying pan or pot, Mixing bowl, Tongs, Paper towels
- 1 kg chicken pieces — bone-in, skin-on
- 4 garlic cloves — minced
- 1 tbsp fresh ginger — grated
- 2 tbsp lemon juice
- 1 tsp paprika
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp turmeric
- 2 tsp salt
- ½ tsp black pepper
- ½ tsp cayenne pepper — optional
- 2 tbsp plain flour or cornstarch — for coating
- Vegetable oil — for frying
Method
- Score the chicken pieces 2—3 times to the bone — this allows the marinade to penetrate deeply.
- Mix garlic, ginger, lemon juice, all spices, salt, and pepper into a paste. Coat chicken thoroughly.
- Marinate for at least 1 hour — overnight in the refrigerator gives the deepest flavour.
- Dust the marinated chicken lightly with flour or cornstarch — just enough to coat the surface.
- Heat oil in a deep pan to 170°C.
- Fry the chicken in batches — do not crowd the pan. Cook for 8—10 minutes per side until deep golden brown and cooked through (internal temperature 74°C).
- Drain on paper towels. Serve immediately.

- Scoring the chicken is essential — the marinade cannot penetrate deep into uncut pieces.
- The flour or cornstarch dusting gives the skin its characteristic crispiness.
- Fry at 170°C — lower and the skin is greasy; higher and it burns before the inside cooks.
- Let the oil return to temperature between batches.

- Not scoring the chicken — marinade stays on the surface.
- Overcrowding the pan — drops the oil temperature and produces soggy skin.
- Too high heat — browned skin, raw interior.
