Kuku wa kuchoma is the chicken lover's answer to nyama choma. Marinated for hours in Kenyan spices and grilled slowly over glowing charcoal, the skin becomes lightly charred and smoky while the meat stays tender and juicy within. At Kenyan nyama choma joints, kuku is often served alongside goat, and the two complement each other beautifully.

Ingredients

Equipment: Charcoal grill or jiko, Tongs, Mixing bowl

  • 1 whole chicken (about 1.5 kg) — spatchcocked, or 1.2 kg chicken pieces
  • 4 garlic cloves — minced
  • 1 tbsp ginger — grated
  • 3 tbsp lemon juice
  • 2 tbsp vegetable oil
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 tsp salt
  • ½ tsp black pepper
  • ½ tsp turmeric

Method

  1. Score the chicken deeply all over — 3—4 cuts per piece to the bone.
  2. Mix all marinade ingredients. Coat chicken thoroughly inside and into all cuts.
  3. Marinate for at least 2 hours — overnight is best for deeply flavoured kuku.
  4. Prepare charcoal grill. Allow to burn to glowing coals — not open flames.
  5. Place chicken on the grill over medium-low heat.
  6. Grill for 30—40 minutes for a whole spatchcocked bird (15—20 per side), or 12—15 minutes per side for pieces, turning regularly.
  7. The chicken is done when the skin is deeply golden with light char marks and the juices run clear when pierced at the thickest point.
  8. Rest for 5 minutes and serve with kachumbari.

Chef Tips

  • Spatchcocking (removing the backbone and flattening the chicken) gives the most even cooking and the best charcoal flavour.
  • Medium-low charcoal is essential — high heat burns the outside before the inside cooks.
  • Baste with lemon juice and oil halfway through for extra flavour and to prevent drying out.

Common Mistakes to Avoid

  • Grilling over open flames — burns the skin before the meat is cooked.
  • Not resting — the chicken loses all its juices when cut immediately.
