A robust garlic and herb marinade, plenty of lemon, and a hot grill or oven produces chicken with a deeply golden exterior, fragrant herb-infused skin, and tender, juicy meat that needs no sauce to be completely satisfying.
Ingredients
Equipment: Mixing bowl, Grill or oven, Tongs or basting brush
- 1.2 kg chicken pieces — bone-in, skin-on
- 6 garlic cloves — minced
- 1 tbsp fresh ginger — grated
- 3 tbsp lemon juice
- 3 tbsp olive oil or vegetable oil
- 2 tbsp fresh coriander — finely chopped
- 1 tbsp fresh thyme — or 1 tsp dried
- 1 tsp paprika
- 1 tsp ground cumin
- 2 tsp salt
- ½ tsp black pepper
Method
- Score the chicken pieces 2—3 times to the bone.
- Mix garlic, ginger, lemon juice, oil, coriander, thyme, paprika, cumin, salt, and pepper into a marinade.
- Coat the chicken thoroughly, ensuring the marinade gets into the scored cuts.
- Marinate for at least 1 hour — overnight gives the best result.
- Grill method: cook over medium charcoal or gas for 12—15 minutes per side, turning once, until deeply golden and cooked through.
- Oven method: roast at 200°C for 30—35 minutes until golden and the juices run clear.
- Rest for 5 minutes before serving.

- Scoring is essential — without it the marinade only flavours the surface.
- Do not rush the marinade — the garlic and lemon need time to penetrate.
- Baste with the remaining marinade (bring to a boil first) during the last 5 minutes for a beautiful glaze.

- Not scoring the chicken.
- Cooking over very high heat — burns the garlic coating before the inside is done.
