🌿 Kenyan Green Chilli Relish
Pilipili Kijani
Kenyan Green Chilli Relish — fresh green chillies, garlic, ginger, coriander, and lime blended into a vibrant, herbal, fiery green condiment. Fresher and more aromatic than standard pili pili — the green sauce that brightens everything it touches.
Green chilli relish is the fresher, more herbal alternative to the tomato-based pili pili. The combination of fresh green chillies with coriander, ginger, and lime creates something that is simultaneously fiery and fragrant — the capsaicin heat of the chilli offset by the bright herbaceousness of the coriander. It is particularly good with grilled fish and coastal dishes.
Ingredients
Equipment: Blender or food processor
- 8—10 fresh green chillies
- 1 cup fresh coriander — packed
- 4 garlic cloves
- 1 tbsp fresh ginger — grated
- 2 tbsp lime juice
- 2 tbsp vegetable oil
- 1 tsp salt
- ½ tsp cumin seeds
- 2 tbsp water
Method
- Dry-toast cumin seeds in a small pan for 30 seconds until fragrant. Cool.
- Combine all ingredients in a blender.
- Blend until smooth — or keep slightly coarse for texture.
- Taste and adjust salt and lime.
- Serve immediately or refrigerate.
Chef Tips
- Toasting the cumin seeds first adds a deeper, nuttier flavour than raw cumin.
- The oil helps emulsify the sauce and carries the fat-soluble flavour compounds.
- For a milder version, remove chilli seeds before blending.
Common Mistakes to Avoid
- Over-blending — loses the bright green colour as the chlorophyll breaks down from heat of motor.
- Not enough salt — green sauces need generous seasoning.
The Science
The vibrant green colour of this relish comes from chlorophyll in the coriander and chilli. Extended blending generates heat from the blender motor that can break down chlorophyll — blend quickly and briefly to preserve the colour.
