Meru Millet Porridge — thick, nourishing finger millet porridge prepared the traditional Meru way — slightly thicker than standard uji and sweetened with local Meru honey. The daily breakfast of the Mount Kenya slopes.
The Meru version of millet porridge is notably thicker than standard Kenyan uji. It is sweetened with the honey from Meru's renowned honey trees and eaten with a spoon.
Heritage & Origin
Origin: Meru County — Eastern Kenya, slopes of Mount Kenya
The Meru people inhabit the fertile slopes of Mount Kenya. Their millet porridge has a slightly thicker consistency and the traditional addition of honey from the region's renowned honey-producing communities. The Meru have cultivated finger millet on Mount Kenya's slopes for generations.
Ingredients
Equipment: Medium saucepan, Wooden spoon
- 1 cup finger millet flour
- 3 cups water
- 2—3 tbsp Meru honey or any raw honey
- ½ cup milk — optional for creaminess
- Pinch of salt
Method
- Mix millet flour with 1 cup cold water to a smooth slurry.
- Bring remaining 2 cups of water to a boil.
- Pour slurry into boiling water, stirring continuously.
- Stir over medium heat for 8—10 minutes until thick — Meru uji is notably thicker than standard.
- Add milk if using. Stir.
- Remove from heat. Add honey — honey added off the heat preserves its live enzymes.
- Serve warm.

The Science
Raw honey contains enzymes denatured above 40°C. Adding honey to warm but not boiling porridge preserves these beneficial enzymes.
