The Pokomo are a Bantu community inhabiting the Tana River Delta. They are an agricultural and fishing community — the Tana River provides freshwater fish central to the Pokomo diet. Pokomo fish curry uses freshwater fish prepared with curry spices influenced by coastal proximity while maintaining distinctly Pokomo characteristics.
Ingredients
Equipment: Large pan, Wooden spoon
- 600g freshwater fish fillets — tilapia or catfish
- 2 medium onions — chopped
- 3 medium tomatoes — diced
- 3 garlic cloves — minced
- 1 tbsp ginger — grated
- 2 tbsp vegetable oil
- 1½ tsp curry powder
- 1 tsp turmeric
- ½ tsp ground cumin
- 2 tsp salt
- 1 cup water
- ¼ cup fresh coriander
- 1 tbsp lime juice
Method
- Season fish with salt and turmeric.
- Cook onions until golden. Add garlic and ginger. Cook 1 minute.
- Add tomatoes, curry powder, turmeric, and cumin. Cook for 6—8 minutes.
- Add water. Bring to a simmer.
- Add fish. Spoon sauce over gently.
- Cover and simmer 8—12 minutes until fish is cooked.
- Add lime and coriander. Serve.
Chef Tips
- Freshwater fish has a slightly earthier flavour that works beautifully with the spice blend.
- Catfish from the Tana River is the traditional choice.

- Overcooking the fish.
- Too thin sauce before adding fish.
