Uji wa Karanga
Kenyan Peanut Porridge — finger millet or sorghum porridge enriched with freshly ground roasted groundnuts, creating a thick, protein-rich, deeply nutty and satisfying breakfast. The high-protein Kenyan breakfast that sustains children and athletes alike.
Uji wa karanga takes the nutritional powerhouse of millet porridge and amplifies it with the protein and healthy fats of roasted groundnuts. The result is richer, creamier, and more satisfying than plain uji — a breakfast that provides sustained energy for hours. It is particularly popular for children and in athletic training communities.
Ingredients
Equipment: Medium saucepan, Wooden spoon, Blender or mortar for grinding groundnuts
- ¾ cup finger millet flour
- ¼ cup roasted groundnuts — finely ground to a paste
- 4 cups water
- 2—3 tbsp sugar or honey
- ½ cup milk — optional
- Pinch of salt
Method
- Roast groundnuts in a dry pan until golden and fragrant. Cool, then grind to a smooth paste or fine powder.
- Mix millet flour and ground groundnuts together with 1 cup cold water to a smooth slurry.
- Bring remaining 3 cups of water to a boil.
- Pour the slurry into the hot water in a steady stream, stirring constantly.
- Cook for 8—10 minutes, stirring continuously, until thick.
- Add sugar and salt. Stir.
- Finish with milk if using. Serve immediately.
Chef Tips
- Freshly roasted and ground groundnuts give incomparably better flavour than peanut butter — roast the nuts yourself.
- Grind the groundnuts to a very fine powder or paste — coarse pieces remain gritty in the porridge.
- The groundnut paste makes the porridge significantly richer — it thickens faster than plain uji.
Common Mistakes to Avoid
- Using shop-bought peanut butter — too much added salt and sugar; fresh-ground is far better.
- Coarsely ground groundnuts — gritty texture in the porridge.
- Not stirring enough — the enriched porridge sticks more readily than plain uji.
The Science
Groundnut proteins and fats dramatically change the porridge texture — the fat coats the starch granules and creates a creamier, more emulsified texture. The protein (25% of groundnut composition) also slows starch absorption, lowering the overall glycaemic index of the meal.
