Ingredients
Equipment: Medium saucepan, Blender or potato masher
- 400g pumpkin — peeled, seeded, and cubed
- ¼ cup finger millet flour or cornmeal
- 3 cups water
- 200ml coconut milk
- 2 tbsp sugar or honey
- ¼ tsp ground cinnamon
- ¼ tsp ground nutmeg
- Pinch of salt
Method
- Boil pumpkin cubes in water for 12—15 minutes until completely soft.
- Blend until smooth or mash thoroughly.
- Return to the saucepan. Add coconut milk and bring to a gentle simmer.
- Mix millet flour or cornmeal with 4 tbsp cold water to a smooth slurry.
- Pour slurry into the simmering pumpkin mixture, stirring constantly.
- Cook for 6—8 minutes until thick.
- Add sugar, cinnamon, nutmeg, and salt. Stir.
- Serve warm.
