Roasted pumpkin seeds are one of Kenya's most resource-conscious snacks — the seeds that might otherwise be discarded when preparing pumpkin are cleaned, dried, and roasted into something genuinely delicious. In rural Kenyan homesteads, nothing from the pumpkin is wasted: the leaves become mboga (KEN082), the flesh becomes food, and the seeds become this snack.
Ingredients
Equipment: Large heavy pan, Paper towels or clean cloth
- 2 cups fresh pumpkin seeds — cleaned
- 1 tsp salt
- 1 tsp vegetable oil — optional
- ½ tsp paprika — optional
- ¼ tsp garlic powder — optional
Method
- Scoop seeds from the pumpkin. Place in a bowl of water and separate from the stringy fibres.
- Rinse thoroughly.
- Spread on a clean cloth or paper towels and pat dry. Allow to air dry for at least 30 minutes — the drier the better.
- Optional: toss with oil and seasonings if using.
- Heat a large dry pan over medium heat.
- Add the seeds in a single layer.
- Stir continuously for 15—20 minutes until golden, toasted, and beginning to pop.
- Season with salt immediately while hot.
- Cool completely before storing.

- Completely dry seeds roast much more evenly — do not skip the drying step.
- They are done when they turn golden and begin to pop slightly.
- For extra flavour, toss in oil and spices before roasting for a coated version.

- Wet seeds — steam instead of roasting, and spit dangerously.
