The preparation begins days in advance: the best quality beef is sourced, whole spices are freshly toasted and ground, and the pilau is cooked with the care and attention that a once-a-year dish deserves.
Ingredients
Equipment: Large heavy sufuria or pot (at least 5L capacity), Spice grinder or mortar, Wooden spoon, Heavy lid
- 1.2 kg beef — best quality, cut into generous cubes
- 4 cups basmati rice — washed and soaked 30 minutes
- 2 large onions — thinly sliced
- 6 garlic cloves — minced
- 2 tbsp ginger — grated
- 4 medium tomatoes — diced
- 4 tbsp vegetable oil
- 8 cups beef stock or water
- 2 tsp salt
- ¼ cup fresh coriander — chopped
Whole spices (toast these extra long for maximum fragrance)
- 2 tsp cumin seeds
- 8 cardamom pods — bruised
- 2 cinnamon sticks
- 8 whole cloves
- 1 tsp black peppercorns
- 2 star anise
Method
- Toast all whole spices together in a dry pan over medium heat for 3—4 minutes until very fragrant — longer than usual for the Christmas version. Grind half to a coarse powder, leave half whole.
- Heat oil in the large sufuria over high heat. Brown beef pieces in batches until deeply seared. Remove.
- In the same pot, cook onions until deeply golden — 10—12 minutes.
- Add garlic and ginger. Cook 2 minutes.
- Add whole and ground spices. Stir 1 minute.
- Add tomatoes. Cook for 8—10 minutes until thick.
- Return beef. Add stock. Bring to a boil.
- Reduce to medium-low. Cover and simmer for 40—45 minutes until beef is very tender.
- Drain soaked rice and add to the pot. Stir gently.
- Bring back to a boil, then reduce to lowest heat. Cover tightly.
- Cook for 18—20 minutes until rice has absorbed all liquid.
- Rest covered for 10 minutes. Fluff gently. Garnish with coriander.
