Ingredients
Equipment: Large wide pan with lid, Wooden spoon
- 1 kg firm fish fillets — snapper, kingfish, or tilapia
- 400ml thick coconut milk
- 2 large onions — finely sliced
- 4 medium tomatoes — diced
- 4 garlic cloves — minced
- 2 tbsp ginger — grated
- 2 tbsp vegetable oil
- 1 tsp curry powder
- 1 tsp turmeric
- 1 tsp paprika
- 2 green chillies
- 2 tsp salt
- ¼ cup fresh coriander
- 1 tbsp lemon juice
- ½ cup fresh coconut — grated, for garnish
Method
- Season fish with salt, turmeric, and paprika. Set aside 15 minutes.
- Heat oil. Cook onions until deeply golden — 8 minutes.
- Add garlic, ginger, and chillies. Cook 1 minute.
- Add tomatoes, curry powder. Cook 8 minutes until very thick.
- Pour in coconut milk. Bring to a gentle simmer.
- Add fish carefully. Spoon sauce over each piece.
- Cover and simmer 10—14 minutes until fish is cooked through.
- Add lemon juice. Garnish with coriander and fresh coconut.

- For Easter, use the finest, freshest fish available — the quality of the fish is the statement.
- Fresh grated coconut as a garnish adds texture and fragrance that dried coconut cannot.
Common Mistakes to Avoid
- Boiling coconut milk hard.
- Moving fish too early — it breaks apart.
