Ingredients

Equipment: Large heavy dum pot, Foil or dough for sealing, Flat griddle or heat diffuser

  • 1.5 kg chicken pieces — bone-in, skin on
  • 5 cups basmati rice — soaked 1 hour
  • 2 large onions — thinly sliced and fried until golden
  • ½ cup ghee or butter
  • ½ tsp saffron — soaked in warm milk
  • ¼ cup fried cashews
  • ¼ cup raisins

Marinade

  • 1 cup natural yogurt
  • 4 garlic cloves — minced
  • 2 tbsp ginger — grated
  • 2 tsp garam masala
  • 1 tsp turmeric
  • 2 tsp paprika
  • 1 tsp cumin
  • 2 tsp salt

Rice water spices

  • 2 bay leaves
  • 4 cardamom pods
  • 1 cinnamon stick
  • 4 cloves

Method

  1. Marinate chicken in all marinade ingredients for 4 hours minimum — overnight preferred.
  2. Cook marinated chicken in ghee until 80% cooked. Remove.
  3. Parboil rice with whole spices in generously salted water until 70% cooked. Drain.
  4. In the dum pot: layer chicken, half the rice, fried onions, cashews, raisins, remaining rice, saffron milk, remaining ghee.
  5. Seal pot with foil or dough.
  6. Cook over low heat with a heat diffuser for 25—30 minutes.
  7. Serve with raita and salad.
