Community nyama choma is prepared at scale, tended by the community's most respected grill-keeper, and eaten communally on large platters.

Ingredients

Equipment: Large charcoal jiko or pit, Long tongs, Large chopping board, Sharp panga or knife for chopping

  • 3 kg mixed goat and beef — ribs, leg sections, shoulder
  • 3 tsp coarse salt
  • 1 tsp black pepper

Optional light seasoning

  • 2 garlic cloves — minced
  • 1 tbsp oil

Method

  1. Prepare the charcoal fire at least 45 minutes before needed.
  2. Season meat simply with salt — this is the tradition.
  3. Place over medium-low coals.
  4. Grill slowly for 60—90 minutes depending on size, turning every 15—20 minutes.
  5. The community grill-keeper manages the fire, adding coals as needed.
  6. The meat is done when deeply browned on all sides and the juices run clear.
  7. Transfer to a large board. Rest 10 minutes.
  8. Chop into eating pieces with a panga or sharp knife.
  9. Serve communally on large platters.
