Ingredients

Equipment: Large heavy pot, Spice grinder, Wooden spoon

  • 3 cups basmati rice — soaked 30 minutes
  • 2 medium carrots — diced
  • 1 cup green beans — cut into 3cm pieces
  • 1 cup fresh or frozen peas
  • 1 large potato — cubed
  • ½ cup cashews
  • 2 large onions — thinly sliced
  • 4 garlic cloves — minced
  • 1 tbsp ginger — grated
  • 3 medium tomatoes — diced
  • 4 tbsp vegetable oil
  • 6 cups vegetable stock
  • 2 tsp salt
  • ¼ cup fresh coriander

Whole spices

  • 2 tsp cumin seeds
  • 6 cardamom pods
  • 1 cinnamon stick
  • 6 cloves
  • 1 tsp black peppercorns
  • 1 star anise

Method

  1. Toast all spices until fragrant. Grind half to a coarse powder, keep half whole.
  2. Heat oil. Cook onions until deeply golden — 10 minutes.
  3. Add garlic and ginger. Cook 1 minute.
  4. Add tomatoes and ground spices. Cook 8 minutes until thick.
  5. Add all vegetables and cashews. Stir and cook 5 minutes.
  6. Add vegetable stock. Bring to a boil.
  7. Add drained rice. Stir gently.
  8. Reduce to lowest heat. Cover tightly. Cook 18—20 minutes.
  9. Rest 10 minutes. Fluff gently. Garnish with coriander.

  • The spice technique is identical to meat pilau — do not reduce the spices just because it is vegetarian.
  • Cashews add the richness that meat would otherwise provide.
