Ingredients

Equipment: Deep frying pan, Small pan for beef, Oven or grill for cheese

    Masala fries base (see KEN225)

    • 600g potatoes — chipped and fried with masala spices

    Beef topping

    • 200g minced beef
    • 1 small onion — finely diced
    • 1 tsp curry powder
    • 1 tsp paprika
    • 1 garlic clove — minced
    • 1 tsp salt

    Toppings

    • 3 tbsp kachumbari
    • 2 tbsp garlic mayo
    • 2 tbsp pili pili sauce
    • 4 tbsp grated cheese
    • 2 tbsp fresh coriander

    Method

    1. Cook minced beef with onion, garlic, curry powder, paprika, and salt until browned and dry.
    2. Make masala fries as per KEN225.
    3. Place hot fries in a serving bowl.
    4. Top with spiced minced beef.
    5. Scatter cheese over beef. Grill briefly or microwave until cheese melts.
    6. Add kachumbari, drizzle garlic mayo and pili pili sauce.
    7. Scatter fresh coriander.
    8. Serve immediately — this does not wait.

    Chef Tips

    • Everything must be hot when assembled — cold elements make the cheese solidify.
    • The kachumbari goes on after the cheese so it stays fresh.
    • Serve with napkins — this is gloriously messy.
