Ingredients

- 4 thick slices sourdough or good bread
- 2 large ripe Kenyan avocados
- 2 tbsp kachumbari — drained
- 2 tbsp lime juice
- 2 eggs — fried or poached
- 1 tsp chilli flakes
- 2 tbsp fresh coriander — chopped
- Flaky sea salt
- Black pepper
- 1 tbsp olive oil
Method
- Toast bread until golden and crispy.
- Mash avocados with lime juice, salt, and pepper. Keep some texture.
- Spread avocado generously on each toast.
- Fry or poach eggs to preference.
- Spoon kachumbari on top of the avocado.
- Place egg on top.
- Scatter chilli flakes, coriander, and a drizzle of olive oil.
- Finish with flaky salt. Serve immediately.
