Kenyan coffee is the most celebrated in the world among specialty coffee enthusiasts — the volcanic soils of Nyeri, Kirinyaga, Murang'a, and the slopes of Mount Kenya produce beans with extraordinary fruit brightness, black currant notes, and complex floral aromas. Served as iced coffee, these qualities shine through with particular clarity. This is the drink that converts people to single-origin coffee.

Ingredients

Equipment: Cold brew jar or coffee maker, Glasses

    Cold Brew Method (preferred)

    • 4 tbsp coarsely ground Kenya AA or Nyeri coffee
    • 500ml cold water
    • Rest 12—18 hours in refrigerator

    OR Quick Chilled Method

    • 4 shots strong brewed Kenyan espresso or filter coffee — cooled

    Assembly

    • Generous ice
    • ½ cup cold whole milk or plant milk
    • 2 tbsp honey or simple syrup

    Method

    1. Cold brew: combine coarsely ground coffee and cold water in a jar. Stir. Refrigerate 12—18 hours. Strain.
    2. Fill glasses generously with ice.
    3. Pour 150ml cold brew or chilled coffee over ice.
    4. Add honey. Stir.
    5. Pour cold milk over — it creates a beautiful layered effect.
    6. Stir gently just before drinking — or drink in layers.

    Chef Tips

    • Cold brew makes the finest iced coffee — the extended cold extraction produces a smooth, bright concentrate with no bitterness.
    • Use Kenya AA or Nyeri single-origin — the quality difference is dramatic and the reason to make this at all.
    • The honey complements Kenyan coffee's natural fruit notes better than sugar.

    Common Mistakes to Avoid

    • Using mediocre coffee — defeats the purpose.
    • Not enough ice — iced coffee warms quickly.

    The Science

Cold brew extracts different compounds than hot brewing. At cold temperatures, fewer bitter acids and more sweet, fruit-forward compounds extract — this is why cold brew is smoother and less bitter than hot brew chilled. Kenyan coffee's natural acidity, which produces its characteristic brightness, is particularly well-suited to cold extraction.
