Kenyan coffee (among the world's most sought-after) and Kenyan-grown cocoa (increasingly recognised for its quality) come together in a drink of extraordinary depth, fruit brightness, and chocolate richness. Every Nairobi café has its own mocha — this version uses dark chocolate for intensity and whole milk for creaminess.

Ingredients

Equipment: Espresso machine or strong coffee maker, Small saucepan, Whisk or milk frother

  • 2 shots Kenyan espresso (or 4 tbsp very strong Kenyan filter coffee)
  • 40g dark chocolate (70%+) — finely chopped
  • 400ml whole milk
  • 2 tbsp honey or sugar
  • ½ tsp vanilla extract
  • Cocoa powder — for dusting
  • Whipped cream — optional

Method

  1. Place chopped dark chocolate and honey in the bottom of each cup.
  2. Pour hot espresso over the chocolate. Stir until completely melted.
  3. Steam milk until hot and frothy (65°C). Or heat in a saucepan and whisk vigorously for foam.
  4. Pour steamed milk over the coffee-chocolate mixture.
  5. Spoon foam on top.
  6. Dust with cocoa powder.
  7. Add whipped cream if desired.
