Kenyan Chocolate Cake — a moist, deeply chocolatey cake enriched with Kenyan coffee for added depth, layered with dark chocolate ganache. The most popular birthday cake in Kenya — rich, indulgent, and universally beloved.
Chocolate cake is requested more than any other at Kenyan celebrations — birthdays, graduations, and farewells all call for it. The secret to the best Kenyan chocolate cake is the addition of strong brewed coffee — it does not add coffee flavour but deepens and intensifies the chocolate character dramatically.
Ingredients
Equipment: Two 20cm cake tins, Saucepan for ganache, Electric beater
- 2 cups all-purpose flour
- 2 cups sugar
- ¾ cup cocoa powder
- 2 tsp baking powder
- 1 tsp bicarbonate of soda
- 1 tsp salt
- 2 large eggs
- 1 cup buttermilk or yogurt
- 1 cup strong brewed Kenyan coffee — warm
- ½ cup vegetable oil
- 2 tsp vanilla extract
Chocolate Ganache
- 200g dark chocolate — chopped
- 200ml whipping cream
- 2 tbsp butter
Method
- Preheat oven to 180°C. Grease and line tins.
- Combine all dry ingredients in a bowl.
- Combine eggs, buttermilk, oil, and vanilla in another bowl.
- Mix wet into dry until just combined.
- Stir in warm coffee — the batter will be very liquid; this is correct.
- Divide between tins. Bake 30—35 minutes.
- Cool completely.
- Make ganache: heat cream to nearly boiling. Pour over chopped chocolate. Rest 2 minutes. Add butter. Stir until smooth.
- Cool until thick enough to spread — about 2 hours.
- Fill and frost generously.

- Ganache must be cooled to a spreadable consistency — do not rush this.

The Science
Coffee contains small amounts of chromogenic acids that react with the alkali in cocoa, deepening its brown colour and rounding its bitterness. This is why coffee-chocolate combinations taste richer than either alone — the acids modify the perception of the chocolate flavour compounds.
