Whipped Cream

  • 400ml whipping cream

Method

  1. Make curd: combine passion fruit, egg yolks, and sugar in a saucepan over low heat. Stir until thickened — 8—10 minutes. Remove. Whisk in butter. Cool completely.
  2. Preheat oven to 180°C. Grease and line tins.
  3. Beat butter and sugar until pale and fluffy — 5 minutes.
  4. Add eggs one at a time, beating well.
  5. Add vanilla. Alternate flour and buttermilk in three additions.
  6. Divide between tins. Bake 35—40 minutes until skewer comes out clean.
  7. Cool completely.
  8. Whip cream with icing sugar to soft peaks.
  9. Fill: spread passion fruit curd on the bottom layer, then whipped cream.
  10. Place second layer. Frost top and sides with remaining cream.
  11. Decorate with fresh tropical fruit.
