Ingredients

Equipment: Large punch bowl, Juicer, Ladle

  • 1 cup passion fruit juice — from about 10 passion fruits
  • 1 cup fresh mango juice
  • 1 cup fresh pineapple juice
  • ½ cup hibiscus concentrate
  • 2 tbsp ginger — freshly juiced or grated and strained
  • 4 tbsp honey or sugar syrup
  • 1 litre sparkling water — added just before serving
  • Juice of 2 limes
  • Ice — generous quantity

Method

  1. Juice the passion fruits, mango, and pineapple.
  2. Prepare the hibiscus concentrate by steeping dried hibiscus flowers in hot water, straining, and cooling.
  3. In the punch bowl, combine all juices, hibiscus concentrate, ginger juice, honey, and lime juice.
  4. Taste and adjust sweetness and lime balance.
  5. Refrigerate until very cold.
  6. Just before serving, add sparkling water and a generous quantity of ice.
