Ingredients
Equipment: Cupcake tin, 12 cupcake liners, Electric beater, Piping bag
- 1½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 115g butter — softened
- ¾ cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup milk
Passion Fruit Buttercream
- 150g butter — softened
- 3 cups icing sugar
- 3 tbsp passion fruit juice — strained
- 1 tsp vanilla
Method
- Preheat oven to 180°C. Line tin with cupcake liners.
- Beat butter and sugar until pale — 4 minutes.
- Add eggs one at a time. Add vanilla.
- Alternate adding flour and milk in three additions.
- Fill liners ⅔ full. Bake 18—20 minutes until a skewer comes out clean.
- Cool completely before frosting.
- Make buttercream: beat butter until pale. Add icing sugar and passion fruit juice alternately. Beat until fluffy.
- Pipe onto cupcakes.
