Kenyan Beef Quesadilla — chapati (or flour tortilla) filled with spiced Kenyan minced beef, mozzarella, kachumbari, and avocado, then folded and pressed in a pan until the exterior is golden and crispy and the cheese is fully melted. A Kenyan-Mexican fusion that works brilliantly.
The Kenyan quesadilla uses chapati instead of a flour tortilla — the result is richer, more flavourful, and more structurally sound. Filled with spiced Kenyan beef and kachumbari instead of plain salsa, it is a fusion that feels completely natural.
Ingredients
Equipment: Large frying pan, Spatula
- 4 chapatis or large flour tortillas
- 250g minced beef — cooked with onion, garlic, curry powder, paprika
- 150g mozzarella — grated
- 3 tbsp kachumbari — drained
- ½ avocado — diced
- 2 tbsp pili pili sauce
- 1 tbsp vegetable oil
Method
- Cook minced beef with onion, garlic, curry powder, paprika, and salt until dry.
- Heat oil in a large pan over medium heat.
- Place one chapati in the pan.
- Spread beef on half the chapati. Add cheese, kachumbari, and avocado.
- Fold the chapati over the filling.
- Cook for 2—3 minutes until golden. Flip carefully.
- Cook other side for 2 minutes until golden and cheese is melted.
- Cut into wedges. Serve with pili pili sauce.
Chef Tips
- Drain the kachumbari well — excess liquid steams the filling rather than crispy-frying it.
- Press gently with a spatula during cooking for even contact.
- The filling must be dry — wet beef makes the chapati soggy.
