Kenyan Coconut Cookies — crispy, golden cookies packed with desiccated coconut, fragrant with cardamom and vanilla. Inspired by the Swahili coastal love of coconut, adapted into a universally beloved baked cookie. The ideal accompaniment to Kenyan masala chai.
Kenyan coconut cookies combine the coastal love of coconut with the universal pleasure of a well-baked biscuit. The cardamom is the Kenyan signature — lifting the coconut into something more complex and fragrant than a plain coconut cookie. They are as at home with masala chai as they are with coffee.
Ingredients
Equipment: Baking tray, Mixing bowls, Oven
- 2 cups all-purpose flour
- 1 cup desiccated coconut
- ½ cup sugar
- ½ cup brown sugar
- 1 tsp ground cardamom
- ½ tsp ground cinnamon
- ½ tsp baking powder
- ½ tsp salt
- ½ cup coconut oil — melted
- 2 large eggs
- 2 tsp vanilla extract
Method
- Preheat oven to 180°C. Line baking tray with parchment.
- Mix flour, coconut, both sugars, cardamom, cinnamon, baking powder, and salt.
- Combine coconut oil, eggs, and vanilla in a separate bowl.
- Mix wet into dry until a soft dough forms.
- Roll into walnut-sized balls. Place on tray with space between.
- Flatten slightly with a fork or palm.
- Bake 12—15 minutes until golden at the edges.
- Cool on tray for 5 minutes — they firm up as they cool.
Chef Tips
- Do not over-bake — they should look slightly underdone in the centre when removed.
- Coconut oil solidifies when chilled — work quickly if your kitchen is cold.
- The cardamom is the Kenyan signature — do not reduce it.

- Over-baking — very easy with coconut cookies.
- Moving before cooled — they are fragile when hot.
The Science
