Ingredients
Equipment: Large wide pan, Tongs
- 600g beef sirloin — thinly sliced against the grain
- 200g button mushrooms — sliced
- 2 medium onions — thinly sliced
- 3 garlic cloves — minced
- 2 tbsp vegetable oil
- 2 tbsp butter
- 1 cup beef stock
- 1 cup sour cream
- 1 tbsp Dijon mustard
- 1 tsp paprika
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp fresh parsley
Method
- Season beef strips with salt and pepper.
- Heat oil in pan over high heat. Sear beef in batches — 1—2 minutes. Remove.
- Add butter. Cook onions until golden — 6 minutes.
- Add garlic and mushrooms. Cook until mushrooms release liquid and brown — 6 minutes.
- Add paprika and Worcestershire sauce. Stir.
- Add beef stock. Deglaze. Reduce by half.
- Remove from heat. Stir in sour cream and mustard.
- Return beef. Stir gently — do not boil after adding sour cream.
- Scatter parsley. Serve over herb rice or pasta.
