Kenyan Garlic Bread — a whole baguette or ciabatta slathered with garlic-herb butter, wrapped in foil, and baked until the butter has melted throughout, then opened and toasted until golden. The side dish that everyone reaches for first — and always runs out before the meal ends.

Ingredients
Equipment: Oven (200°C), Foil, Knife
- 1 baguette or ciabatta
Garlic-Herb Butter
- 100g butter — softened
- 4 garlic cloves — minced to paste
- 2 tbsp fresh parsley — finely chopped
- 1 tbsp fresh coriander — finely chopped
- ½ tsp salt
- Pinch of black pepper
Method
- Preheat oven to 200°C.
- Beat softened butter with garlic, herbs, salt, and pepper until combined.
- Slice bread at an angle at 2cm intervals, cutting ¾ of the way through — do not cut all the way through.
- Spread garlic butter generously into each cut and over the top.
- Wrap tightly in foil.
- Bake for 10 minutes.
- Open foil. Bake 3—5 more minutes until golden and lightly toasted.
- Serve immediately.

- Room temperature butter blends with garlic more smoothly than cold.
