Kenyan Beef Lasagna — layers of fresh pasta sheets, richly spiced Kenyan beef bolognese, and creamy béchamel, baked until bubbling and golden. A restaurant staple that has become a home celebration dish — the family meal that feeds a crowd beautifully.
Lasagna has become one of Kenya's most beloved baked pasta dishes — served at hotel buffets, family celebrations, and restaurant menus across the country. The Kenyan version uses aromatic spices in the bolognese and adds paprika to the béchamel for character.
Ingredients
Equipment: Large pan for bolognese, Saucepan for béchamel, 30x20cm baking dish, Oven (180°C)
- 12 lasagna sheets (pre-cooked type)
Kenyan Beef Bolognese
- 600g minced beef
- 2 large onions — diced
- 4 garlic cloves — minced
- 2 tbsp tomato paste
- 400g tinned tomatoes
- 2 medium tomatoes — diced
- 1 tsp curry powder
- 1 tsp paprika
- 1 tsp dried oregano
- 2 tsp salt
- 2 tbsp vegetable oil
Béchamel
- 4 tbsp butter
- 4 tbsp all-purpose flour
- 4 cups whole milk
- 1 tsp paprika
- ½ tsp nutmeg
- 1 tsp salt
- Pinch of pepper
Topping
- 200g mozzarella — grated
- 50g parmesan — grated
Method
- Make bolognese: cook onion and garlic in oil. Add beef — brown thoroughly. Add tomato paste, tomatoes, spices, and salt. Simmer 25 minutes until thick.
- Make béchamel: melt butter. Add flour — cook 1 minute. Whisk in milk gradually until smooth. Simmer until thick. Season with paprika, nutmeg, and salt.
- Preheat oven to 180°C.
- Layer in baking dish: béchamel, lasagna sheets, bolognese, béchamel, sheets, bolognese — repeat.
- Final layer: béchamel, mozzarella, parmesan.
- Bake covered with foil for 30 minutes. Uncover. Bake 15 more until golden and bubbling.
- Rest 10 minutes before cutting.

The Science
The béchamel (made from a roux) contains a starch gel that absorbs excess moisture from the bolognese during baking, preventing the common soggy lasagna problem. The foil for the first 30 minutes creates a steaming environment that cooks the pasta through; removing the foil for the final 15 minutes dries the surface and creates the golden crust.
