🍝 Kenyan Chicken Alfredo
Alfredo ya Kuku ya Kenya
Kenyan Chicken Alfredo — grilled chicken strips over fettuccine in a rich, creamy parmesan sauce with garlic, paprika, and fresh coriander. The most popular pasta dish in Nairobi's restaurants — Italian technique with a gentle Kenyan touch.
Chicken Alfredo is the pasta dish that Nairobi's restaurants have made their own — the parmesan cream sauce is made properly (with pasta water emulsification), the chicken is grilled rather than boiled, and fresh coriander replaces plain parsley for a subtle Kenyan character.
Ingredients
Equipment: Large pot for pasta, Large wide pan, Tongs
- 400g fettuccine or tagliatelle
- 400g chicken breast — grilled with paprika and garlic
- 4 tbsp butter
- 4 garlic cloves — minced
- 1 cup heavy cream
- 100g parmesan — finely grated
- 1 tsp paprika
- ½ tsp black pepper
- ½ cup pasta cooking water — reserved
- 2 tbsp fresh coriander
Method
- Grill chicken with paprika, garlic, and salt. Slice thinly.
- Cook pasta al dente. Reserve 1 cup cooking water.
- In a wide pan, melt butter. Cook garlic 1 minute until fragrant.
- Add cream. Simmer 2 minutes.
- Add pasta and a splash of pasta water. Toss vigorously.
- Add parmesan gradually, tossing constantly. Add pasta water as needed for silky sauce.
- Season with paprika, salt, and pepper.
- Plate and lay chicken strips over pasta.
- Garnish with coriander.
Chef Tips
- The pasta water is the secret — its starch emulsifies the cream and parmesan into a silky sauce.
- Add parmesan off the heat — high heat makes it clump.
- Toss vigorously and continuously — the motion creates the emulsion.
Common Mistakes to Avoid
- Discarding pasta water.
- Adding parmesan over high heat — clumps.
- Not enough water — sauce is too thick.
The Science
Pasta cooking water contains dissolved starch that acts as an emulsifier — it bridges the fat (cream, butter) and water phases, creating a stable sauce that clings to the pasta rather than pooling at the bottom of the bowl.
