Ingredients
Equipment: Large pot, Large wide pan
- 400g penne or rigatoni
- 2 cups cherry tomatoes — halved
- 2 courgettes — diced
- 2 cups baby spinach
- 5 garlic cloves — sliced
- 4 tbsp olive oil
- 1 tbsp butter
- ½ cup cream
- ½ cup parmesan — grated
- 1 tsp paprika
- 1 tsp dried oregano
- ½ cup pasta water — reserved
- 1 tsp salt
- ½ tsp black pepper
- Fresh basil or coriander
Method
- Roast cherry tomatoes at 200°C with olive oil and salt for 15 minutes.
- Cook pasta al dente. Reserve 1 cup pasta water.
- Sauté courgette in olive oil and butter until golden — 4 minutes.
- Add garlic and paprika. Cook 1 minute.
- Add roasted tomatoes and cream. Simmer 3 minutes.
- Add pasta and pasta water. Toss.
- Add spinach. Toss until just wilted.
- Add parmesan. Toss off heat.
- Garnish with fresh herbs.

- Add spinach only at the end — it wilts in seconds.
