Ingredients
Equipment: Large pot for pasta, Large wide pan
- 400g linguine or spaghetti
- 200g prawns — peeled
- 200g calamari rings
- 200g fresh mussels — cleaned
- 5 garlic cloves — sliced
- 4 tbsp olive oil
- 1 tbsp butter
- 4 medium tomatoes — diced
- ½ cup white wine or fish stock
- 1 tsp chilli flakes
- 1 tsp paprika
- ½ cup pasta water
- 2 tsp salt
- Fresh coriander and parsley
Method
- Cook pasta al dente. Reserve 1 cup pasta water.
- In a wide pan, heat olive oil over high heat.
- Cook garlic and chilli 30 seconds.
- Add calamari rings — cook 2 minutes. Remove.
- Add prawns — cook 2 minutes until pink. Remove.
- Add mussels and wine. Cover 4—5 minutes until opened.
- Add tomatoes and paprika. Cook 4 minutes.
- Return all seafood. Add pasta and pasta water.
- Add butter. Toss vigorously. Scatter herbs.

- Seafood timing is critical — calamari and prawns are done in 2 minutes; cook them separately to avoid overcooking.
- Discard any mussels that do not open during cooking.
- This dish should be assembled and eaten immediately.
