Kenyan Seafood Platter — a spectacular Mombasa hotel-style platter of grilled whole fish, butter garlic prawns, calamari rings, oysters, and tamarind mussels, served with coconut rice and tamarind sauce. The Indian Ocean on a plate.
The Kenyan coastal seafood platter is one of the greatest culinary experiences the country offers — the Indian Ocean's extraordinary marine life, prepared with Swahili spice knowledge and grilled over charcoal or pan-seared with butter and garlic. At Mombasa's finest restaurants, this platter represents the pinnacle of coastal Kenyan hospitality.
Ingredients
Equipment: Charcoal grill or griddle, Large pan for prawns and calamari, Large platter
- 1 whole snapper or kingfish (600g) — scaled and scored
- 12 large prawns — deveined, shell on
- 300g calamari — cleaned and sliced into rings
- 12 fresh mussels — cleaned
- 6 fresh oysters — opened
Marinades
- 4 tbsp butter
- 4 garlic cloves — minced
- 2 tbsp tamarind paste
- 1 tsp ginger
- 2 tbsp lemon juice
- 2 tsp salt
Accompaniments
- Coconut rice
- Tamarind sauce
- Kachumbari
- Lemon wedges
Method
- Season whole fish with garlic, lemon, and salt. Score deeply. Grill 8—10 min per side.
- Make garlic butter: melt butter with garlic and ginger. Cook 2 minutes.
- Toss prawns in garlic butter. Grill or pan-fry 3—4 min until pink and curled.
- Cook calamari in hot pan for 2—3 min — no more or it toughens.
- Steam mussels with tamarind paste and water 4—5 min until opened. Discard any that stay closed.
- Arrange oysters on ice on the platter.
- Assemble platter: whole fish at centre, prawns, calamari, mussels, and oysters arranged around.
- Add coconut rice, sauces, and lemon wedges.
Chef Tips
- Timing is everything on a seafood platter — calamari is 2—3 minutes maximum; prawns 3—4; fish is last off the grill. Stagger so everything finishes simultaneously.
- Oysters are served raw on ice — handle carefully.
- The calamari must be quick-cooked or slow-cooked (20+ minutes) — anything in between produces rubber.
Common Mistakes to Avoid
- Overcooked calamari — rubbery beyond rescue.
- Not staging the cooking order — different seafood needs very different times.
The Science
Calamari muscle proteins coagulate rapidly above 60°C — after a brief 2—3 minute cook the proteins are just set and the texture is tender. Between 5—15 minutes they are rubbery (fully contracted proteins). Beyond 20 minutes the collagen slowly dissolves and they become tender again — explaining the two cooking options.
