Ingredients
Equipment: Sharp heavy knife for splitting lobster, Charcoal grill or broiler, Basting brush
- 2 whole spiny lobsters (600—800g each)
Garlic Butter
- 100g unsalted butter — softened
- 4 garlic cloves — minced to paste
- 2 tbsp fresh parsley
- 2 tbsp fresh coriander
- 1 tbsp lemon juice
- ½ tsp salt
- ¼ tsp black pepper
- Lemon halves
- Fresh herb garnish
Method
- Make garlic butter: beat softened butter with garlic, herbs, lemon, salt, and pepper until combined.
- Split lobsters: place on a board shell-side up. Insert a sharp knife at the head. Push down firmly to split in half. Remove the stomach sack.
- Crack the claws slightly to ensure even cooking.
- Place cut-side up on the grill.
- Spread garlic butter generously over the exposed flesh.
- Grill for 8—12 minutes depending on size, basting every 3 minutes.
- The flesh should be just opaque throughout.
- Serve with extra garlic butter and lemon.
Chef Tips
- The garlic butter made in advance and refrigerated can be sliced over the lobster for a restaurant presentation.
- Do not overcook — overcooked lobster is rubbery and expensive regret.
- Rest 2 minutes before serving.
