A properly made mushroom soup is one of the most satisfying things a restaurant kitchen can produce — the key is deeply caramelising the mushrooms before blending. Kenya has excellent button and portobello mushrooms, and the soup made from properly cooked ones has a depth that surprises.
Ingredients
Equipment: Large pot, Blender
- 500g mixed mushrooms — button and portobello
- 2 medium onions — diced
- 4 garlic cloves — minced
- 3 tbsp butter
- 1 tbsp olive oil
- 3 cups vegetable or chicken stock
- 1 cup heavy cream
- 1 tsp dried thyme
- ½ tsp black pepper
- 1 tsp salt
- 2 tbsp fresh parsley
Method
- Heat butter and olive oil in a large pot over medium-high heat.
- Add mushrooms in a single layer. Do not stir for 3—4 minutes — allow to brown.
- Stir and continue cooking until deeply golden — 8—10 minutes total.
- Add onions and garlic. Cook 5 minutes.
- Add thyme and stock. Bring to a boil. Simmer 10 minutes.
- Blend until smooth.
- Return to pot. Add cream. Heat gently.
- Season and garnish with parsley.

- Do not stir the mushrooms early — undisturbed browning creates the deep caramelised flavour.
