Ingredients
Equipment: Large pot, Saucepan, Blender
- 600g chicken pieces — bone-in
- 2 litres water
- 2 medium onions — diced
- 2 medium carrots — diced
- 2 celery stalks — diced
- 4 garlic cloves
- 3 tbsp butter
- 3 tbsp flour
- 1 cup heavy cream
- 1 tsp paprika
- 1 tsp dried thyme
- 2 tsp salt
- Fresh parsley for garnish
Method
- Simmer chicken with water, one onion, carrot, celery, garlic, thyme, and salt for 45 minutes.
- Remove chicken. Shred finely. Strain and reserve the stock.
- Melt butter in a saucepan. Cook remaining diced onion until soft.
- Add flour. Cook 1 minute to form a roux.
- Whisk in reserved chicken stock gradually until smooth.
- Simmer 10 minutes until thickened.
- Add cream and paprika. Simmer 5 minutes.
- Add shredded chicken.
- Season and garnish with parsley.
