Ingredients
Equipment: Baking tray, Large pot, Blender
- 800g orange-fleshed pumpkin — peeled, seeded, cubed
- 2 medium onions — roughly chopped
- 4 garlic cloves
- 2 tbsp ginger — sliced
- 3 tbsp coconut oil or vegetable oil
- 400ml coconut milk
- 2 cups vegetable stock
- 1 tsp curry powder
- ½ tsp cumin
- 1 tsp salt
- 1 tsp sugar
- Toasted pumpkin seeds and cream — to garnish
Method
- Toss pumpkin, onion, and garlic with oil. Roast at 200°C for 25 minutes until soft and caramelised.
- Transfer to a pot with ginger, stock, coconut milk, and spices.
- Simmer 10 minutes.
- Blend until completely smooth.
- Season with salt and sugar.
- Serve with a swirl of coconut cream and toasted pumpkin seeds.
