Kenyan beef ribs — properly done — are one of the most impressive dishes in the restaurant repertoire. The three-hour slow roast followed by charcoal finishing creates meat that falls from the bone while still holding a magnificent charred exterior.

Ingredients

Equipment: Large roasting tin, Oven, Charcoal grill or broiler, Basting brush

  • 1 full rack beef ribs (1.5—2 kg)

Dry Rub

  • 2 tsp salt
  • 2 tsp paprika
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • ½ tsp cayenne

Honey Glaze

  • 4 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1 garlic clove — minced

Method

  1. Apply dry rub all over the ribs. Refrigerate 4 hours minimum.
  2. Preheat oven to 150°C. Wrap ribs tightly in foil.
  3. Slow roast for 2.5—3 hours until meat pulls back from bones and is very tender.
  4. Mix honey glaze ingredients.
  5. Remove ribs from foil. Brush with honey glaze.
  6. Grill over charcoal or under broiler for 8—10 minutes, basting every 3 minutes.
  7. The glaze should caramelise magnificently.
  8. Rest 5 minutes. Cut between bones to serve.
