Ingredients

Goat Ribs
- 400g goat ribs — salted and grilled
Chicken Tikka
- 300g chicken thighs — marinated in yogurt, garlic, ginger, turmeric, paprika
Beef Mishkaki
- 300g beef sirloin — cubed, marinated in garlic, cumin, lemon
Kenyan Sausages
- 4 smokies — grilled
Accompaniments
- 2 cups kachumbari
- 4 ugali fingers — sliced from a firm ugali
- Pili pili sauce
- Garlic mayo
- Fresh lemon wedges
- Fresh coriander
Method
- Day before: prepare all marinades and marinate each protein separately overnight.
- Grill goat ribs over medium-low charcoal for 35—40 minutes, turning regularly.
- Thread beef mishkaki on skewers. Grill 8—10 minutes, turning every 2 minutes.
- Grill chicken thighs for 6—7 minutes per side until cooked through.
- Grill smokies for 5 minutes until charred and hot.
- Make firm ugali. Cool and slice into fingers.
- Arrange everything on a large platter — meats in sections, sauces in bowls, ugali to one side.
- Garnish with fresh coriander and lemon wedges.
Chef Tips
- Each protein needs different grill timing — stagger them so everything arrives at the platter simultaneously.
- Ugali fingers should be firm enough to hold — use less water than usual when making.
