Mkate wa Kiswahili is the bread of the Swahili coast — fragrant with cardamom, enriched with coconut milk, and baked to a soft golden loaf. It is made in Zanzibar homes and bakeries, eaten for breakfast with chai, and served at celebrations. Its distinctive coconut-cardamom fragrance is the smell of Zanzibar's mornings.
Ingredients
Equipment: Mixing bowl, Loaf tin, Oven (180°C)
- 3 cups all-purpose flour
- 2 tsp active dry yeast
- 3 tbsp sugar
- 1 tsp ground cardamom
- ½ tsp salt
- 200ml warm coconut milk
- ½ cup warm water
- 2 eggs
- 3 tbsp butter — softened
Method
- Dissolve yeast and sugar in warm water. Rest 10 minutes until foamy.
- Mix flour, cardamom, and salt.
- Beat eggs into coconut milk. Add yeast mixture.
- Pour into flour. Mix to a soft dough.
- Add softened butter. Knead 10 minutes until smooth and elastic.
- Cover and rest 90 minutes until doubled.
- Shape into a loaf. Place in greased tin.
- Rest 30 minutes. Bake at 180°C for 25—30 minutes until golden.
- Cool before slicing.
