🍚 Tanzanian Beef Pilau

Tanzanian Beef Pilau — fragrant Zanzibar-spiced rice cooked with the finest beef, whole cloves, cinnamon, cardamom, and cumin, deep golden and intensely aromatic. The celebration pilau of the Tanzanian mainland coast — more richly spiced than any other East African pilau.
Beef pilau on the Tanzanian coast is a celebration of Zanzibar's spice heritage — the same cloves, cinnamon, and cardamom grown on the spice island are used lavishly in the preparation. This is the pilau served at weddings, Eid celebrations, and major feast days along the entire Tanzanian coast.
Ingredients
Equipment: Large sufuria, Spice grinder, Heavy lid
- 800g beef — best quality, cubed
- 4 cups basmati rice — soaked 30 minutes
- 2 large onions — thinly sliced
- 4 medium tomatoes — diced
- 5 garlic cloves — minced
- 2 tbsp ginger — grated
- 4 tbsp vegetable oil
- 8 cups beef stock
- 2 tsp salt
- ¼ cup fresh coriander
Zanzibar Spices
- 2 tsp cumin seeds
- 10 cardamom pods
- 2 cinnamon sticks
- 10 whole cloves
- 1 tsp black peppercorns
- 2 star anise
- 1 tsp coriander seeds
Method
- Toast all spices until very fragrant. Grind half coarsely, keep half whole.
- Brown beef in batches. Remove.
- Cook onions until deeply golden — 12 minutes.
- Add garlic, ginger, spices, tomatoes. Cook 10 minutes until very thick.
- Return beef. Add stock. Simmer covered 45 minutes until very tender.
- Add drained rice. Stir gently.
- Bring to boil. Cover tightly. Lowest heat for 20 minutes.
- Rest 12 minutes. Fluff with coriander.
Chef Tips
- Use Zanzibar cloves where possible — their eugenol content is the highest in the world.
- The beef must be falling-tender before rice is added.
- The cloth-under-lid trick absorbs excess steam for perfect rice.

- Under-cooking the beef.
- Insufficient spice toasting.
