Goat pilau at a Zanzibar Eid celebration is one of the greatest dishes of East Africa — the young goat simmered with Zanzibar's own cloves, cinnamon, and cardamom produces a broth so fragrant that cooking it fills the neighbourhood with the smell of celebration. The rice is then cooked in this broth, absorbing every note of the spiced goat.

Ingredients

Equipment: Very large sufuria, Spice grinder, Heavy lid and cloth

  • 1.2 kg young goat — bone-in
  • 5 cups basmati rice — soaked
  • 3 large onions — thinly sliced
  • 5 medium tomatoes — diced
  • 6 garlic cloves
  • 2 tbsp ginger
  • 5 tbsp vegetable oil
  • 10 cups water
  • 3 tsp salt
  • ½ cup fresh coriander

Zanzibar Spice Mix (generous)

  • 3 tsp cumin seeds
  • 12 cardamom pods
  • 3 cinnamon sticks
  • 12 whole cloves
  • 2 tsp black peppercorns
  • 3 star anise
  • 2 tsp coriander seeds

Method

  1. Toast all spices deeply. Grind half to a powder, keep half whole.
  2. Brown goat pieces in batches. Remove.
  3. Cook onions until very golden — 15 minutes.
  4. Add garlic, ginger, all spices, tomatoes. Cook 12 minutes until thick.
  5. Return goat. Add water. Simmer covered 60—75 minutes until very tender.
  6. Remove goat pieces carefully. Measure remaining broth — you need 8 cups.
  7. Add drained rice to broth. Bring to a boil.
  8. Place goat pieces back on top of rice.
  9. Cover with cloth then lid. Lowest heat for 22 minutes.
  10. Rest 15 minutes. Serve goat atop the fragrant rice.
