Goat is the most celebratory meat in Tanzania — when a goat is slaughtered, it signals a significant occasion. Mchuzi wa Mbuzi is the slow-cooked stew made from that goat — patient, aromatic, and deeply satisfying. The collagen from goat bones creates a silky sauce that coats ugali perfectly.
Ingredients
Equipment: Large heavy pot with lid
- 1 kg young goat — bone-in pieces
- 2 large onions — diced
- 4 medium tomatoes — diced
- 4 garlic cloves — minced
- 1 tbsp ginger — grated
- 3 tbsp vegetable oil
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp turmeric
- 1 tsp paprika
- 2 tsp salt
- 3 cups water
- ¼ cup fresh coriander
Method
- Brown goat pieces in hot oil. Remove.
- Cook onions until deeply golden.
- Add garlic, ginger, and spices. Stir 1 minute.
- Add tomatoes. Cook until completely reduced — 10 minutes.
- Return goat. Add water.
- Simmer covered on very low heat for 75—90 minutes until meat falls from bone.
- Adjust seasoning. Garnish with coriander.
Chef Tips
- Young goat (mbuzi mdogo) is most tender.
- Very low heat for the simmer — goat toughens if boiled hard.
- The longer the simmer, the better.

- Hard boiling.
- Young goat is essential — old goat requires 3+ hours.
The Science
