🐐 Tanzanian Spiced Goat Roast

Mbuzi wa Kukaanga na Viungo — whole sections of young goat marinated overnight in a paste of Zanzibar spices, garlic, and ginger, then slow-roasted over charcoal for 2 hours until magnificently charred outside and falling-tender within. The celebration roast of Tanzania.
The spiced goat roast is Tanzania's celebration centrepiece — when the occasion demands the highest expression of hospitality, a whole or half goat is marinated overnight in Zanzibar spices and slow-roasted over charcoal. The combination of the spice paste and the low, slow charcoal heat produces a roast of extraordinary complexity.
Ingredients
Equipment: Large charcoal grill or pit, Basting brush, Tongs
- 1 half young goat (2—3 kg sections)
Overnight Spice Marinade
- 6 garlic cloves — minced
- 2 tbsp ginger
- 3 tbsp lemon juice
- 3 tbsp vegetable oil
- 2 tsp cumin
- 2 tsp coriander
- 1 tsp turmeric
- 1 tsp chilli powder
- 1 tsp ground cloves
- 1 tsp ground cardamom
- 2 tsp paprika
- 3 tsp salt
- ½ cup fresh coriander — blended in
Method
- Score goat sections deeply all over.
- Blend all marinade ingredients into a smooth paste.
- Rub paste deep into every score and all over the surface.
- Marinate overnight (8 hours minimum).
- Prepare large charcoal fire. Allow to reach glowing coals.
- Roast over medium-low indirect heat for 90—120 minutes, turning every 20—30 minutes.
- Move to direct heat in the final 15 minutes for a magnificent char.
- Rest 10 minutes. Carve communally.
Chef Tips
- Overnight marination allows the spice paste to penetrate deep through the scores.
- Low and slow — the goat must be completely tender before the final char.
- The final direct heat is what creates the magnificent caramelised crust.
Common Mistakes to Avoid
- Short marination.
- Too high heat throughout — burns outside before inside cooks.
The Science
The overnight marinade with its acidic lemon juice partially denatures surface proteins, allowing the spice compounds to penetrate deeper. The extended low-heat roasting converts connective tissue collagen to gelatin, producing falling-tender meat beneath the caramelised spice crust.
