Mishkaki ya Kuku
Mishkaki ya Kuku — chicken thigh cubes marinated in garlic, ginger, lime, and Tanzanian spices, grilled over charcoal until golden and juicy. The lighter, popular alternative to beef mishkaki — equally beloved and found at every street food jiko.
Chicken mishkaki are the street food of Tanzania's health-conscious — lighter than beef but equally fragrant and satisfying. Chicken thigh is always used — it stays juicy over charcoal where breast would dry out.
Ingredients
Equipment: Skewers, Charcoal grill
- 600g chicken thighs — boneless, cubed
- 4 garlic cloves — minced
- 1 tbsp ginger
- 2 tbsp lime juice
- 2 tbsp oil
- 1 tsp curry powder
- 1 tsp paprika
- ½ tsp turmeric
- 1 tsp salt
Method
- Mix marinade. Toss chicken in marinade. Refrigerate 2 hours.
- Thread onto skewers.
- Grill over medium-high coals 3—4 minutes per side.
- Internal temperature should reach 74°C.
- Serve with chapati and pili pili.
