Beef wet fry is the restaurant beef dish of urban Tanzania — quick to make, intensely flavoured, and served at every restaurant and food court in Dar es Salaam. The "wet" refers to the saucy, slightly glossy consistency that distinguishes it from a dry fry.
Ingredients
Equipment: Wide frying pan or wok
- 500g beef sirloin — thinly sliced
- 2 onions — sliced
- 2 tomatoes — diced
- 1 green bell pepper — sliced
- 3 garlic cloves — minced
- 1 tbsp ginger
- 2 tbsp vegetable oil
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp soy sauce
- 2 tsp salt
- ½ tsp black pepper
- ¼ cup coriander
Method
- Heat pan over very high heat until smoking.
- Add oil. Sear beef strips in batches — 2 minutes. Remove.
- Add onions, garlic, ginger. Stir-fry 3 minutes.
- Add bell pepper and tomatoes. Cook 3 minutes.
- Add cumin, paprika, soy sauce, salt, and pepper.
- Return beef. Toss everything together.
- Add a splash of water. Cook 3—4 minutes until sauce is glossy and slightly reduced.
- Scatter coriander. Serve immediately.

- Very high heat throughout — this is a stir-fry, not a simmer.
- Sear beef in small batches — crowding steams instead of sears.
- The soy sauce is the umami secret — do not skip.
