Mchuzi wa Ini — Tanzanian beef or goat liver cooked quickly in a spiced tomato-onion sauce with lemon and coriander. Intensely nutritious, rich in iron, and fast to prepare — a beloved everyday Tanzanian dish that takes less than 20 minutes.
Liver is one of Tanzania's most consumed organ meats — affordable, extraordinarily nutritious, and fast to cook. Tanzanian liver stew is distinctive for the lemon juice added at the end, which cuts through the richness of the liver and brightens the sauce dramatically.
Ingredients
Equipment: Wide frying pan
- 500g beef or goat liver — sliced
- 2 onions — diced
- 3 tomatoes — diced
- 3 garlic cloves
- 1 tbsp ginger
- 2 tbsp oil
- 1 tsp curry powder
- 1 tsp paprika
- 2 tsp salt
- 1 tbsp lemon juice
- ¼ cup coriander
Method
- Soak liver slices in salted water for 15 minutes. Drain and pat dry.
- Season liver with salt and pepper.
- Sear liver in hot oil — 1—2 minutes per side. Remove.
- Cook onions, garlic, ginger until golden.
- Add tomatoes and spices. Cook 5 minutes.
- Return liver. Toss gently. Cook 3—4 more minutes.
- Add lemon juice and coriander. Serve immediately.

- Do not overcook liver — it becomes hard and bitter.
- Soaking in salted water removes excess blood and bitterness.
- The lemon juice at the end is essential — it transforms the dish.

The Science
Liver proteins coagulate very rapidly above 65°C. Overcooking produces a hard, dry texture and intensifies the metallic flavour compounds. Lemon juice's citric acid partially neutralises some of these compounds, brightening the flavour.
