Ingredients

Equipment: Very large pot

  • 1 kg beef or goat bones — with marrow
  • 2 medium onions — halved
  • 3 medium carrots — roughly chopped
  • 2 celery stalks — optional
  • 4 garlic cloves
  • 3 tbsp ginger — sliced
  • 2 tsp salt
  • 1 tsp black peppercorns
  • 3 litres water
  • ¼ cup fresh coriander
  • Fresh lemon to serve

Method

  1. Blanch bones in boiling water for 5 minutes. Drain and rinse.
  2. Place bones in a large pot with all vegetables, garlic, ginger, salt, and peppercorns.
  3. Cover with 3 litres cold water.
  4. Bring to a boil. Skim foam.
  5. Reduce to the lowest simmer. Cover and cook for 2 hours.
  6. Strain. Return broth to pot.
  7. Taste and adjust salt.
  8. Serve garnished with coriander and a wedge of lemon.
