🍗 Tanzanian Grilled Chicken
Kuku wa Kuchoma
Kuku wa Kuchoma — Tanzanian grilled chicken. Chicken pieces marinated in garlic, ginger, lemon, and Tanzanian spices, grilled over charcoal until deeply golden, slightly charred, and irresistibly fragrant. Tanzania's favourite weekend and celebration chicken.

Ingredients
Equipment: Charcoal grill, Tongs
- 1 whole chicken — jointed into 8 pieces
- 4 garlic cloves — minced
- 1 tbsp ginger
- 3 tbsp lemon juice
- 3 tbsp oil
- 1 tsp curry powder
- 1 tsp paprika
- 1 tsp cumin
- ½ tsp turmeric
- 2 tsp salt
Method
- Score chicken pieces 3—4 times to the bone.
- Mix marinade. Rub into scores and all over. Marinate 2 hours.
- Grill over medium coals, skin-side down, 10 minutes.
- Turn. Grill 8 minutes.
- Continue turning every 5 minutes for 25—30 total minutes.
- Internal temperature: 74°C.

- Score deeply — the marinade needs to reach the bone.
- Medium heat only — chicken burns easily.
- Check doneness — no pink at the bone.

The Science
