The coconut milk in this curry does two things: it makes the sauce richer and creamier, and it slightly sweetens the beef stew, producing a depth of flavour that plain tomato-based stew cannot match. It is the coastal version of mchuzi wa nyama.

Ingredients

Equipment: Large pot

  • 800g beef — cubed
  • 2 onions — diced
  • 4 tomatoes — diced
  • 4 garlic cloves
  • 1 tbsp ginger
  • 400ml coconut milk
  • 3 tbsp oil
  • 2 tsp curry powder
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • 2 tsp salt
  • 2 cups water
  • ¼ cup coriander

Method

  1. Brown beef. Remove.
  2. Cook onions until golden. Add garlic, ginger, spices.
  3. Add tomatoes. Cook 8 minutes until thick.
  4. Return beef. Add water. Simmer covered 55—60 minutes until very tender.
  5. Add coconut milk. Simmer gently 10 minutes.
  6. Garnish with coriander.

  • Never add coconut milk before the beef is tender.
